The most important uncertainties in nutrient hazard characterization presented by the US National Research Council arise from the following questions: (1) If animal data are used, which toxicity endpoints should be considered and which representations should be used. (2) What are the differences in bioavailability and dose-response relationships between animals and humans. (3) If human data are used, consider what the detrimental effect of the use is and what the difference in the dose-response relationship is. (4) How data on subchronic exposures can be used to estimate the risk of lifetime exposures. (5) How to use data on exposure through non-dietary routes.
